Our Cooking Around the World series continues with dishes to celebrate April as Arab American Heritage Month. Chef Mary Weaver, owner of Newport Cooks, will be preparing Moroccan Vegetable Tagine and Khobz (Moroccan bread).
Moroccan Vegetable Tagine is a tasty, slow-cooked stew usually made in a traditional tagine—a clay or ceramic pot with a wide base and cone-shaped lid. But no worries if you don’t have one; a heavy pot or Dutch oven works just as well. It's loaded with a mix of veggies, nuts, herbs, and fragrant spices, making it super satisfying and full of flavor. Pair it with couscous, rice or Moroccan bread, and you’ve got yourself a hearty, healthy meal.
