Built with a focus on producing small lot, high quality wines, our winery features the best modern equipment including two sorting tables, temperature-controlled stainless steel tanks, and a barrel aging cave. September 28, 2005, marked its first use when six plus tons of Tempranillo grapes were harvested from Christian's Diamond Mine Vineyard. An underground barrel cellar is under construction, which ultimately will serve as the foundation for our new hospitality center.
Grape SortingGentle handling of the grapes and meticulous hand sorting ensures that only the best fruit is used for winemaking. The grapes are transported to the winery using small lugs, avoiding the bruising and breaking of the skins that occurs in large harvest bins. They are then placed on the first sorting belt and where we cull imperfect clusters such as those damaged by sunburn and unripe berries. Once the grapes are destemmed, each berry is inspected on the second sorting belt before being transferred to a tank for fermentation.
Our fermentations take place in stainless steel tanks under close supervision of the winemaking team. Each tank's temperature can be controlled, heating or cooling as necessary. With this precision we are able to fine-tune the style of each wine to show off its best attributes.
Six Sigma Cave DoorsOnce the fermentations are complete, the resulting wines are transferred into oak barrels for aging in our cave. The cave naturally keeps the wines at the optimum temperature and humidity allowing them to develop fantastic aromas and mouth-filling texture.
