About Us;
Our brewery is a local original. Â It has been custom-designed and fabricated, in part, by an artisan located in Delhi, NY.
- The beer begins as a mash in our re-purposed dairy tank.
- Our boil kettle is a custom vessel designed to optimize hop utilization and provide a roiling boil.
- We employ open fermentation techniques to allow fermentation gases to escape quickly.
- Fresh, cool beer is stored in Tax Determination Tanks to pay Uncle Sam and Uncle Andy before being served up in a glass to enjoy at our table, or in a growler to take home to share at your table.
