Guilliams Vineyards was established in 1979. Like many of our neighbors, we moved to Spring Mountain not in search of a house near a job; we came in search of a place to feel at home; a home where we could raise our two sons Thomas and Steven. It is a place of great natural beauty and diversity, with vigorous verdant forests teaming with wildlife.
Our seven acres of vineyard are located high above the Napa Valley on hillsides originally planted more than a century ago. There are four distinct soil types with multiple microclimates that create significant complexity in our grapes. To create a Bordeaux style Estate Cabernet Sauvignon, we planted 3 varieties of grapes: 80% Cabernet Sauvignon, 10% Merlot, and 10% Cabernet Franc. Production is low, as is typical of hillside vineyards with low vigor soils, yielding fruit with intense varietal flavors.
As we make our wine, we passionately support the concept of wine growing, where grape growing and wine making are complimentary with the same ultimate goal. We carefully harvest ripe fruit, identified as groups of vines, by tasting in the field. It can ultimately take three or four weeks to harvest our small vineyard. We use only our own estate fruit, fermenting in small lots that are punched down by hand. Our wines are then aged for two years in French Oak barrels, blended, and bottle aged for an additional year before release.
