Open: Year Round
A family run establishment, Caraccioli Cellars is proud to go extra lengths to ensure the best tasting and distinctive wines. Founded in 2006 Caraccioli Cellars aims to deliver the highest quality wines through top-tier grapes from the Santa Lucia Highlands. We strive to highlight the quality of Pinot Noir and Chardonnay grapes by developing 'fruit forward' still and sparkle varietals. We offer Brut and Brut Rosé in our sparkle program and Pinot Noir and Chardonnay still wines. Michel Salgues, previously head winemaker at Roderer Estate, leads our sparkling wine division, while Joe Rowetizer develops our still wines. We strive to provide the most elegant wines possible through rigorous procedures perfected by Salgues. With meticulous attention to detail, we are able to eliminate defects and perfect our wine making process. The combination of these two experienced winemakers promises a full portfolio of amazing wines offered by Caraccioli Cellars.
Caraccioli Cellars is committed to celebrating the quality of our Santa Lucia Highlands' grapes through a detailed and rigorous winemaking process. Our "fruit forward" wines showcase the high caliber of our grape vineyards. Caraccioli Cellars allows the essential flavors of the fruit to boldly shine through the wine, leading to subtle variation from year to year.
Caraccioli Cellars' wines begin in the vineyard under the meticulous supervision of winemaker Joe Rawitzer. Our Pinot Noir and Chardonnay grapes are hand picked and placed in small totes instead of the common practice of using large bins. This hands-on process enables us to limit incidental stress and pressure on the grape, thereby limiting premature crushing and juicing associated with conventional methods. By using labor-intensive procedures, we are able to avoid bruising of the grapes and ensure the rich expression of full fruit flavors while eliminating undesirable bitterness or stemminess.
The boutique nature of Caraccioli Cellars enables us to use barrel fermentation for all of our sparkle and still wines. Our use of the finest French Oak barrels available allows us to round the edge of the flavor profile and deliver a distinctly smooth and supple wine.
