What's Cooking for Hispanic Heritage Month?

In honor of Hispanic Heritage Month, AARP VI celebrated our Hispanic volunteers! The Hispanic community makes up 18.4% of the population in the Virgin Islands and plays a vital role in shaping the islands' culture.

We want to kick off our "What’s Cooking VI?” segment with a recipe from our amazing volunteer, Pablo Rojas. He was happy to share his favorite recipe from Ecuador.
