UMAN LARGE POT SOUP

Ingredients

  • 7 Containers of Low Sodium Vegetable Broth  (Organic if desired)
  • Calamata olives
  • 1 green pepper
  • 1 yellow pepper
  • 1 red pepper
  • 6 sweet potatoes
  • 2 boxes of mushrooms
  • Bag of raisins
  • 1 Yellow onion
  • Clump of green onions
  • 1 large Yellow squash
  • 2 Zucchini squash
  • 1 large fresh garlic clump

Season as you wish

  • Ground black pepper
  • Oregano
  • Fennel

Directions

  • Cut up vegetables.
  • Pour broth in a large pot and heat. Add the harder vegetables first to allow them to soften.
  • Simmer until the vegetables are done.  Serves a crowd or freeze portions for later.
