AARP members and guests are invited to join us for Pizza from Around the World, a four-session cooking demonstration that will offer healthy meal ideas ideal for the health and dietary needs of the 50.

Each webinar provides base sauces that can be used in other dishes and are made with fresh vegetables and flavorful herbs and spices for meals with no processed meat, less cholesterol, sugar and salt. Recipes include healthier fats, more fiber, vitamins and minerals.

These flavorful dishes are perfect for lunch or dinner!

  • Tuesday, August 22nd - Traditional Margherita Pizza from Scratch

A traditional Margherita pizza includes tomatoes, basil and fresh mozzarella. The use of fresh ingredients is what makes this a flavorful healthy choice. In this session you will learn how to make homemade pizza dough and discuss healthy pizza crust options. You will also learn to make homemade pizza sauce using fresh herbs. And you will also learn the benefits of using fresh versus low moisture mozzarella.

Ingredients:

Thin-Crust Whole-Wheat Pizza Dough (overnight recipe):
makes about 2 13” pizza crusts
1½ cups whole-wheat flour
1 cup bread flour
3 tsp sugar
¾ tsp instant or rapid-rise yeast
1¼ cups ice water
2 tbsp extra-virgin olive oil
1¾ tsp salt
***If you are using this as your crust please make this day before the class. Otherwise you can use the 5 minute pizza dough recipe the day of class.

5 Minute Pizza Dough: (makes 2 12” pizza)
3 cups (375 mL) flour, plus additional as needed
3 tsp (7 mL) baking powder
1 tsp (2 mL) salt
½ tsp (1 mL) baking soda
2 cup (250 mL) 2% plain low-fat Greek yogurt
Flavoring (optional, see cook's tip)
½ tbsp (7 mL) olive, canola or vegetable oil to grease stone

Pizza Sauce:
6 oz can tomato paste
15 oz can tomato sauce
1 tbsp dried oregano
1 tbsp Italian seasoning
2 teaspoons garlic powder
1 teaspoon onion powder
1 tsp kosher salt or ½ tsp table salt
¼ teaspoon freshly ground black pepper
¼ teaspoon chili pepper flakes
1 tsp sugar
½ tsp red pepper flakes (optional)

Pizza Toppings:
4 Large Plum or Roma Tomatoes sliced ¼” thick
16 oz fresh mozzarella cheese sliced ¼” thick or mozzarella balls
2 handfuls fresh basil leaves chiffonade

  • Thursday, August 24th - Mushroom & Paneer Naan Pizza

This colorful Indian-Italian fusion recipe features a rich makhani tomato cashew sauce as its base, mushrooms and fresh Indian paneer. Its colorful, bold flavors make it a crowd pleaser. You will learn how to make your own homemade makhani sauce, which includes tomatoes, cashews, garlic, onions and spices, as a base for this and many other dishes. You will also learn to use fresh curd cheese known as paneer, as well as marinated mushrooms to top a naan crust for a delicious, Indian-style pizza.

Ingredients:

300 gms paneer cut in cubes
8 oz button or mini portabella mushrooms cut in half
4-5 tbsp yogurt
2 tablespoon ginger
3 cloves garlic
1 teaspoon coriander powder
½ tsp hot chili powder or to taste
1 tbsp fresh lemon juice
2 tsp kasuri methi
1 tsp chaat masala
1 tsp garam masala
2 tbsp oil
Salt to taste
Shredded low moisture mozzarella or pepper jack cheese as much or as less you like
4 garlic naans - store bought
2 tbsp finely chopped cilantro leaves

Makhani Sauce:
½ cup water
1 tbsp cornstarch
1 tablespoon oil
2 tablespoon butter
1 inch cinnamon stick
4 green cardamom
2-3 cloves
6-8 cashews - broken into pieces
2-3 cloves garlic crushed
½ cup finely chopped onions
¾ tbsp ginger grated (approx 1” knob)
1 tsp sugar
1½ tsp garam masala
½ teaspoon kashmiri chili powder (less if
prefer milder
½ tbsp kasuri methi
2 tbsp heavy cream
2½ -3 cups tomato puree 4-5 large tomatoes blanched and pureed

  • Tuesday, August 29th - Grilled Vegetables Moroccan Pizza

This webinar will teach the creation of a Moroccan style pizza that features grilled seasonal vegetables, preserved lemons and feta cheese on top of a harissa sauce base. Learn to make harissa sauce, a spicy Moroccan chili garlic sauce that can be used in many other dishes. You will also learn to use preserved lemons and healthy variations.

Ingredients:

Harissa Sauce:
8 roasted red peppers from a jar
1 teaspoon crushed red chili pepper
1 teaspoon ground coriander seeds
1 teaspoon ground cumin
½ teaspoon caraway seeds
4 cloves garlic crushed
¾ teaspoon salt or to taste
2 tablespoons lemon juice
6 tablespoons olive oil

Crust and Toppings:
Feta and mozzarella cheese as much or as less you like - about 6 oz /pizza
4 naans - store bought or 2 premade 8” pizza crust like Boboli
2 tsp olive oil
1 preserved lemon - thinly sliced or minced
1 zucchini thinly sliced
1 red onion thinly sliced
1 jar artichoke heart chunked or sliced thick
1 red pepper sliced
salt and pepper to taste
¼ cup black or red olives optional

Optional topping suggestions:
tomatoes
bell peppers
cauliflower
fresh cherry tomatoes

  • Thursday, August 31st - Mexican Pizza

If you're a lover of Mexican food, you'll love this Mexican Pizza. This interactive webinar will teach how to make a Vegetarian Mexican Pizza that features a flavorful refried black bean salsa as the base sauce which provides a healthy low fat high fiber protein. This pizza will be topped with traditional nutrient-packed fiesta vegetables, traditional Mexican blend of Monterey Jack and cheddar cheese and served on a traditional pizza crust.

Ingredients:

1 - 15 ounce can refried black beans (or regular refried beans)
½ cup salsa (use your favorite) plus additional for serving on top of pizza
8 medium size flour tortillas (use corn tortillas if gluten free) or 2 flat bread round
(blind-baked pizza crust can also be used)
1 medium onion sliced thin
2 medium bell peppers - combo of green peppers, red peppers, orange peppers (approx 1 cup seeded and chopped)
1 cup frozen corn or kernels from 2 corn on the cob
8 oz mushrooms cut into thin slices
½ bag of spinach
1 tsp cumin powder
1 tbsp taco seasoning
½ tsp salt
1½ cup shredded cheese - your choice of Mexican cheese blend, Monterey Jack,
Colby Jack, fresh mozzarella or pepper jack cheese
2 tbsp cilantro (optional)
3-4 green onions chopped fine for garnish
1 avocado - sliced

Optional topping suggestions:
tomatoes
bell peppers
green chilis
red onions
green onions
black olives
green olives
Jalapenos
fresh cherry tomatoes
Corn
Avocado
Mangos
