Cooking for Two with Carol Daniel
Virtual Cooking Show focused on Recipes for Two People

AARP St. Louis presents Cooking for Two with Carol Daniel, a fun and engaging virtual cooking show that focuses on recipes for two.

Carol Daniel is a radio host on KMOX NewsRadio 1120, who loves to cook. And we are excited that she is willing to share her favorite recipes with our members!

During this episode Carol prepares Breakfast for Dinner. A meal that will be savory sweet! Try cooking this meal at home with the below recipe.

BREAKFAST FOR DINNER MENU
French Vanilla French Toast, scrambled eggs, bacon, berries, orange juice, coffee, tea, flowers

Berries
raspberries, blueberries, blackberries and strawberries in small bowl, keep chilled

French Toast
2 eggs
1/2 cup milk (I use unsweetened soy milk)
2 tablespoons sugar (i have used Splenda)
1 tablespoon pure vanilla extract (please invest in this)
1/4 teaspoon  Cinnamon
1 tablespoon butter
6 slices brioche bread (the better the bread, the better the French Toast)
powdered sugar for dusting

Mix eggs, milk, sugar, vanilla extract and cinnamon in a wide bowl. Make sure all the egg is mixed in. Melt butter in skillet over medium heat. Dip each slice of bread in egg mixture and brown on each side. Keep warm in oven until all slices are done. Serve with honey or syrup and powered sugar dusted on top

Scrambled Eggs
1 egg per person
salt, pepper, rosemary(crushed in pestle and mortar)
tsp water
cooking spray or butter

Crack eggs into a bowl and add water, pepper, salt and rosemary. Use a fork to mix them. Heat skillet over medium heat. Spray cooking spray or melt butter in pan. add eggs to cover the bottom of the pan. Use spatula to continuously move eggs from edge and fold over. turn heat off and continue cooking. Careful not to over cook.

Bacon
turkey, pork or meatless
cracked pepper

turkey or meatless bacon on paper towel in microwave, cracked pepper on each slice and cover with paper towel. Cook for 2 min

pork bacon in skilled, cook according to directions and put cracked pepper on it in last minute of cooking.

Flowers
place single flower in a small bud vase next to each plate
