Chef Ronaldo Recipe: Protein Waffle Ice Cream Sandwich

Chef Ronaldo's take on the ice cream sandwich adds proper carbohydrates, proteins and fats for a boost to your health. Check out the recipe in English and Spanish.
Protein Waffle Ice Cream Sandwich

Prep time: 15 minutes
Cooking time (waffles): 3-5 minutes
Banana ice cream: Freeze for 1 hour
Makes: 4 sandwiches

Banana Ice Cream Ingredients:

  • Banana ice cream (Note: You will have leftover banana ice cream to enjoy later.)
  • 4 frozen bananas (peeled)
  • 10 tablespoons almond milk

Waffle Ingredients:

  • 1 Scoop Swee2ooth Cinnamon Rollin’ protein powder
  • 1 cup almond flour
  • 4 pasture raised eggs
  • 1 teaspoon baking soda
  • 1/8 teaspoon sea salt

Banana Ice Cream Directions:

  • To freeze bananas, peel and place in a Ziploc bag.
  • Place in the freezer until it is frozen solid.
  • Remove bananas from the freezer, cut into small rounds, place in the mixer.
  • Turn on blender on the low setting and slowly add the almond milk (1 tbsp. at a time) until you have reached an ice cream consistency.
  • Transfer to a sealable container and place back in the freezer for 1 hour.

Waffle Directions:

  • Add Almond flour, baking soda, sea salt, protein powder into a bowl.
  • In a separate bowl add the eggs, whisk well.
  • Add almond flour mixture to the eggs, with a plastic spatula or similar tool mix the mixture together. It is important you use a figure motion to create the batter, do this until all of the ingredients become a smooth batter.
  • Divide the mixture into 2 equal parts before making waffles.
  • Follow your waffle maker instructions to make the waffle.


  • Break waffles apart, creating 8 equal parts. (2 waffles makes 4 sandwiches)
  • Remove banana ice cream from the freezer and add about 1⁄2 cup between 2 pieces of waffle to create your sandwich.
  • Garnish with fruit if desired or sprinkle cinnamon on top for an added wow factor.

Sanwich De Helaldo De Proteina Waffle
