Come virtually to North Carolina for the exciting series, "Heritage on a Plate: WNC’s Culinary Showcase," a tribute to the rich and diverse culinary traditions of Western North Carolina. Our host Susi Gott Séguret, a passionate expert well-versed in Appalachian culture, will take you on a flavorful journey through the region's unique food heritage.
Session 2: A Close-Up of Appalachian Ingredients
Discover the iconic ingredients that define Appalachian cuisine, delving into the wild and cultivated foods of the region—ramps, morels, poke sallet and sochan, and game meats like squirrel, deer and bear. Learn how these ingredients are foraged, prepared and celebrated in local kitchens. We’ll also explore the role of music and dance in food culture, and how recipes are passed down through rhythm, ritual and community gatherings.
