About the Event

In this class, chef Liz Barbour of Liz Barbour’s Creative Feast will demonstrate how to prepare tasty Roast Pork Loin with Spinach and Feta Stuffing and Mashed Cauliflower – two great additions to your healthy low-carb holiday eating plan. 

If you’d like to cook along, here are the ingredients to have on hand for the pork roast: 

  • 3-pound boneless pork roast or pork loin (not pork tenderloin)  
  • 4 garlic cloves, minced  
  • 1 10-ounce package frozen spinach, thawed  
  • 1 16-ounce jar roasted red pepper, drained  
  • 8 ounces feta, crumbled  
  • 1⁄2 cup fresh parsley, chopped  
  • 2 tablespoons extra virgin olive oil  
  • 1 tablespoon fresh rosemary, chopped  
  • Salt and ground pepper  
  • 2 tablespoons olive oil, avocado oil, pork fat, or coconut oil 
  • Butcher’s twine   

For the mashed cauliflower: 

  • 1 medium cauliflower 
  • 4 cloves garlic  
  • 1 teaspoon salt  
  • 3 ounces cream cheese-full fat  
  • 2 Tablespoons unsalted butter  
  • salt and pepper to taste  
  • 1⁄2 cup flat leafed parsley, chopped 

If you’re new to cooking, Liz -- a regular guest on New Hampshire’s WMUR Cook’s Corner -- will take you step-by-step through the recipes to help build your confidence and inspire you to prepare meals more often – and more healthfully -- at home. The goal is that you’ll gain important cooking skills and insight on how to select and combine quality ingredients so you can create amazing dishes for friends and family.
