"The Whole Bird" - Getting the Most From Your Chicken


Did you know that the composition of a whole chicken provides the framework for many essential culinary skills?  In this session, Master Butcher Dale Thomas will be discussing how to save money by using the whole bird and showing how to break down a chicken into the convenient cuts we find at the supermarket.  In addition, he'll provide tips for roasting a chicken,  making chicken stock, poached chicken breasts (for a nearly fat-free dish) and roasted thighs for crispy skin and the rendering of extra fat from the dish.

Dale Thomas was chef at the Hale Koa for 30 years.  He provides culinary instruction at Windward community college and is a Master Butcher.

Daniel Swift is the workforce development coordinator at Windward Community College, focusing on the areas of Hospitality and Food and Beverage education.  He has taught culinary, baking, and pastry hospitality courses for the last 19 years and is host of the AARP Hawai'i Fast Healthy and Ono Cooking series.
