Learn How to Eat Healthily on a Budget
Healthy eating doesn’t have to break the bank. That’s the message AARP in San Antonio and the San Antonio Food Bank hope to communicate with a cooking demonstration on Thursday, July 20.
Using the weapons of good flavor, seasonal vegetables and a favorite chili recipe, Luz Myriam Neira, director of nutrition, health and wellness for the food bank, is fighting the obesity and diabetes epidemics one meal at a time.
Neira will use the event to emphasize the cost savings that are possible when shopping for produce by season.
“If you want to buy fruit and vegetables without looking into what’s in season, it’s going to be more expensive, because you have to pay the price of bringing in produce from other parts of the country,” Neira said. But certain items, like carrots, bananas and tomatoes, are almost always available at a reasonable price, she said. Neira will also teach easy ways to swap vegetable protein, such as beans, for meat.
Those attending the event, from 6 to 8 p.m. at Sul Ross Middle School, 3630 Callaghan Rd., will have a chance to taste eggplant chili and will get the recipe to take home, along with Feeding Texas, a compilation of recipes from South Texas food banks. Registration is required at 877-926-8300. —Laura Tillman
